Fluffy Lemon Flavor Goat Cheese Pancakes

Ingredients

For the Pancakes

  • Zest of 1/2 lemon
  • 50 g unsalted butter (melt)
  • 180 g all-purpose flour
  • 4 g baking powder
  • A pinch of salt
  • 8 g turmeric
  • 2 eggs
  • 40 g white granulated sugar
  • 150 g spreadable goat cheese
  • 100 ml milk (can be plant-based milk)

For the Raspberry Syrup

  • 150 g fresh raspberries
  • 10 g confectioners' sugar
  • 20 g honey
  • 5 ml lemon juice

Instructions

For the Pancakes

  • Wash the lemon, pour over with boiling hot water and zest one half of the lemon.
  • In a small pot, melt the butter over low heat. Set aside.
  • In a small bowl combine together flour, baking powder, salt and turmeric.
  • Fit a stand mixer with the whisk attachment. Use a medium size bowl and place the eggs and white sugar in. Beat on medium speed gradually increasing to high until light and glossy.
  • Use a rubber spatula to gently fold in 1/3 of the flour mix, then combine on low speed. With the rubber spatula scrape down the sides of the bowl. Add goat cheese and milk and combine on low speed just until incorporated. Add the lemon zest and remaining flour mixture. Mix on low speed just until well incorporated.
  • Lastly, scrape down the sides of the bowl and add the melted butter. Combine on low speed for 30 seconds, increasing to high speed for the last 10 seconds.
  • Preheat a non-stick frying pan, scoop out 2 tablespoons onto a hot pan. Cook for approx. 4 mins on one side, until bubbles form and the top sets gently. Flip to the other side and cook for 2 more minutes.

For the Raspberry Syrup

  • Place all ingredients in a blender and mix together just until combined. Pour over your pancake stack and decorate with some extra fresh fruit if desired.
