Coconut Milk Oatmeal Recipe

This is my absolutely favorite oatmeal recipe. It uses coconut milk which makes the oatmeal very light in flavor. Best served still warm and with your favorite toppings of choice.

Ingredients

  • 4 tbsp rolled oats
  • 6 tbsp boiling water
  • 1 tbsp canned coconut milk
  • 1 tsp honey
  • 4-6 almonds
  • ½ apple
  • A handful of blueberries

Instructions

  • Place rolled oats in your breakfast bowl, boil the water and pour over the rolled oats. Mix with a spoon and cover the bowl with a plate. Set aside for 10-15 minutes.
  • While the oats are resting, wash the blueberries and peel the apple. Cut the apple in chunks and set aside.
  • After approx. 15 minutes, take the oat bowl, add a tablespoon of canned coconut milk and a teaspoon of honey, chop and add almonds & mix everything.
  • Layer the porridge with fresh fruit. ENJOY!
