Coconut Milk Oatmeal Recipe

This is my absolutely favorite oatmeal recipe. It uses coconut milk which makes the oatmeal very light in flavor. Best served still warm and with your favorite toppings of choice.

Ingredients in This Oatmeal Recipe

  • Rolled oats – choose good quality rolled oats. Try to avoid instant oats as they will soak and get soggy.
  • Boiling water – using boiling water and adding it directly to oats makes it so that you don’t have to boil them (and saves your time as a result!).
  • Canned coconut milk – you can also use a light version of canned coconut milk.
  • Honey – alternatively use maple syrup instead.
  • Almonds – or walnuts, hazelnuts, pecans – choose to your liking!
  • Apple and blueberries – you can use any fruit of your choice.

How to Make This Recipe?

  1. Place rolled oats in your breakfast bowl, boil the water and pour over the rolled oats. Mix with a spoon and cover the bowl with a plate. Set aside for 10-15 minutes.
  2. While the oats are resting, wash the blueberries and peel the apple. Cut the apple in chunks and set aside.
  3. After approx. 15 minutes, take the oat bowl, add a tablespoon of canned coconut milk and a teaspoon of honey, chop and add almonds & mix everything.
  4. Layer the porridge with fresh fruit. Enjoy!

What to Serve With Oatmeal?

If you ever feel stuck for oatmeal topping ideas, here are just a few suggestions of what to have with your morning oats:

  • seasonal fruit – this is one of my favorite ways of serving oatmeal. Pick and choose the ones that you like most and layer them on top of your prepared oatmeal.
  • peanut butter – add some fruit to add extra flavor.
  • raw cocoa – I love mixing it in for some crunch and richness, then adding some fresh fruit on top.
  • homemade fruit preserve – especially out of season, when you’re in serious need of fruit just add a spoon of fruit preserve and top with peanut butter.
  • lemon or orange zest – zest of 1/4 lemon per 1 serving with some nuts and raw cocoa.
