Seriously Fluffy Pancakes From Scratch

The fluffiest, most delicious pancakes from scratch. They taste extra delicious when served warm, with a topping of fresh blueberries and honey or… your favorite topping of choice. Keep on reading for a few ideas of what to put on pancakes!

Pancakes Ingredients

  • All-purpose flour – use your favorite brand.
  • Baking staples – vanilla extract, baking powder and a pinch of salt.
  • Granulated sugar – you can use either white or brown sugar. If you go for brown sugar, substitute it in 1:1 proportion.
  • Butter – which will make for the texture and delicate flavor of these pancakes.
  • Milk – I used plant-based, almond milk although you can just as easily substitute it with traditional milk.
  • Eggs – if you’re looking to make the pancakes vegan, you can replace eggs and use 1 ripe banana instead. This will slightly change the flavor of the pancakes but the consistency will be very similar.

How to Make Pancakes From Scratch

In three easy steps!

  1. Mix all dry ingredients together in a large bowl. In a small pot or in a bowl using a microwave, melt butter. Add all liquid ingredients to dry ingredients (if you’re using bananas, mash them in a separate bowl and add them now) and combine everything using a whisk, until smooth.
  2. Heat up a small (approx 12cm / 5inch diameter) non-stick frying pan.
  3. Pour 1 scoop of the pancake batter onto the hot pan. Cover with a lid and fry for 3 minutes on one side. Flip to the other side, fry for 2 more minutes with a lid on.

What to Put on Pancakes?

If you’re making pancakes from scratch at home, they are one of those incredible recipes that you can pair with just about anything. Here are just a few examples:

  • peanut butter & nutella or jam;
  • mango, strawberries & pomegranate seeds;
  • bananas and cashew or almond butter;
  • coconut mousse (store bought, usually sold in jars) and raspberries;
  • 3 tablespoons of mascarpone, whipped with a tablespoon of double cream and vanilla extract and layered on pancakes with some fresh persimmon.

How to Make Pancakes Fluffy?

Some of my tips for making pancakes extra fluffy are:

  • make sure to add some baking powder;
  • instead of using only milk, mix 50/50 sparkling water with milk;
  • whisk the pancake batter with an electric mixer.

Ingredients

For the Pancakes

  • 250 ml milk (plant based or traditional)
  • 2 eggs

For the Topping

  • 1 tbsp honey
  • 1 tbsp lemon juice
  • Seasonal fruit of choice
