Seriously Fluffy Pancakes From Scratch

For the Pancakes
- 240 g all-purpose flour
- 1½ tsp baking powder
- Vanilla extract
- 1 tbsp granulated sugar
- A pinch of salt
- 2 tbsp butter
- 250 ml milk (plant based or traditional)
- 2 eggs
For the Topping
- 1 tbsp honey
- 1 tbsp lemon juice
- Seasonal fruit of choice
For the Pancakes
Mix all dry ingredients together in a large bowl. In a small pot or in a bowl using a microwave, melt butter. Add all liquid ingredients to dry ingredients and combine using a whisk, until smooth.
Heat up a small (approx 12cm / 5inch diameter) non-stick frying pan.
Pour 1 scoop of the pancake batter onto the hot pan. Cover with a lid and fry for 3 minutes on one side. Flip to the other side, fry for 2 more minutes with a lid on.
